    Add bacon slices or ham and smoked sausage to pan and cook until lightly browned.
    bacon slices: 4-5, ham: 1 c (diced), smoked sausage: 1/3 lb (cut into bite-sized pieces)

    Add onion , celery , garlic , and thyme . Sauté until fragrant ⏱️ 2-3 minutes .

    Put black eyed peas in slow cooker or Instant Pot . Add the cooked mixture and all other ingredients: chicken broth + extra bouillon, creole seasoning , smoked paprika , salt , and pepper to taste.
